The 2021 Dodeca originates from the more challenging, rockier sections of a steep, west-facing slope. These parcels, characterized by schist over calcium deposits, yield small bunches with wild, herbaceous characters, contributing to a wine of complexity and intrigue.

Winemaking Details

● Harvest Date: 4th April ● Yield: 3.7 t/ha ● Fermentation: ○ Single ferment to preserve the integrity of this unique parcel ○ 43% whole bunch inclusion ○ Extended maceration for 22 days on skins ● Pressing was small batch, either direct to barrel or with one night's settling before barreling down ● Malolactic fermentation completed in barrel ● Maturation occurred in French oak barrels (17% new oak)
